    Wash the basil and coriander leaves and chop them roughly.

    Chop the onion, deseed the green chili and chop.

    Pound the garlic and leave aside.

    Put the ground meat into a bowl and add all the ingredients except for the oil.

    Use clean hands to mix all the ingredients well.

    Now wash your hands, dry them and grease your palms to start shaping the meat.

    The mixture tends to be quite sticky so the oil helps during the shaping process.

    Scoop out small portions of the mixture to make balls, the size of a small lime.

    Lay them out on a plate as you go. Keep greasing your palms after every two or three chicken patties are shaped. Dont worry if you cant get perfect circles. They will retain their shape as they start cooking.

    Once youre done, pour a little olive oil in a pan and bring it up to medium high heat. If using ghee, keep the temperature on medium low.
