Salmon is one of my favorite fishes and I usually eat it by itself. After trying this recipe I will never eat it without this very tasty pesto sauce! Made from spinach and arugula the sauce is a perfect compliment to the baked salmon.

This meal also has perfect macros for keto dieters, with a good amount of vitamins to boot. This recipe should become a weekly staple in any diet!

    Measure the Spinach and Rocket Leaves (Arugula) and put them into a food processor.

    Add the remaining ingredients (for the pesto sauce) into the food processor and give the ingredients a good whiz until everything is well blended. Leave aside for later.

    Turn the oven on to 400° F

    Wash the salmon fillets and pat them dry with a paper napkin.

    Sprinkle salt, pepper, garlic powder, and parmesan cheese over the fillets and place the lemon slices over the fillets.

    Drizzle with olive oil and bake in the preheated oven for 20-25 minutes, if the fillets are over 1 inch thick. If the fillets are thinner, check the fish after 15 minutes. It should flake easily at the thickest part with a fork.

    Pour a small portion of the pesto sauce onto the plate and place the salmon fillet over it. Serve it immediately.
