    Beat the 3 egg whites at high speed for approximately 4 minutes, just until you get soft peaks.

    Now add the stevia, syrup, almond essence (almond meal) and food color and beat again for a few seconds.

    Add the almond meal, desiccated coconut and cardamom powder to the egg white mixture and fold gently.

    Turn the oven on and set the temperature to 350° F.

    Shape the mixture into small balls and place on a baking tray (lined and greased) leaving at least 1 cm between each macaroon.

    Bake for 11 minutes or until the macaroons start to turn golden brown. Then turn off the oven and leave the macaroons in for at least 5 minutes.

    Pull them out of the oven, allow them to cool and serve.
