    Chop all the vegetables including the cilantro and leave aside. Chop the walnuts into small bits.

    Cut the cauliflower into big pieces if youre using a hand held grater to make cauliflower rice. If youre using a food processor, cut the cauliflower into smaller florets.

    Wash the cauliflower pieces and leave aside to drain.

    Use the hand held grater or food processor to shred the cauliflower into tiny bits that resemble couscous.

    Now heat 2 Tbsp of Olive oil in a non stick frying pan and add the shredded cauliflower.

    Stir quickly on low heat so that the cauliflower doesnt burn or stick.

    Continue cooking the cauliflower on low heat for about 5-6 minutes, stirring frequently.

    Sprinkle salt, mix everything once again and take the pan off the stove.

    Empty the cauliflower couscous into another bowl, add all the other ingredients to it and mix well.

    Squeeze lemon juice over the couscous and stir once more. Taste for seasoning and add more lemon juice if required.
