This muffin recipe is low in carbs and made with coconut flour and sugar free maple syrup for flavoring. Bring back muffins for breakfast, enjoy with coffee or tea and some eggs to complete your breakfast.

    Turn the oven on to 350° F and leave to pre-heat.

    Weigh all the ingredients that need to be measured and leave aside.

    Combine the coconut flour, soda bicarbonate, flaxseed powder, salt, walnuts, and cinnamon powder in a bowl and mix them well.

    Break 3 eggs in a bowl. Add the yogurt, maple syrup and milk, and whisk everything together till well combined.

    Add the dry ingredients to the wet ones and mix everything once again.

    Fill muffin cases until their ¾ full and put the muffin tray into your pre-heated oven.

    Bake for 20-25 minutes or until cooked through.

    To make the glaze, melt butter in a small bowl, add the maple syrup and cinnamon powder and stir.

    Use a brush to glaze the muffins with this mixture.
