    Fill a saucepan with water (just enough to boil the cauliflower) and leave it on the stove on high heat.

    In the meanwhile cut the cauliflower into florets, wash and drop it into the saucepan on the stove.

    Cook for approximately 10-12 minutes or until the cauliflower is very tender.

    Once cooked, drain the water and leave the cauliflower to cool for a minute or two before blending it in a food processor.

    Once mashed, empty the cauliflower into a bowl, add garlic, salt, pepper and the ricotta cheese and mix well. Taste for seasoning. Cover and leave in a warm place.

    Wash the fish fillets and place them on a paper towel in a plate. Dry the fish with the paper towel. Sprinkle salt on both sides of the fillets and leave aside.

    Pour out the Dukkah spice mix on a plate and coat the seasoned fish fillets on both sides by pressing the fish down firmly onto the spice blend.

    Once youve coated all the pieces, heat olive oil in a pan and carefully place the fillets in the pan.

    Lower the heat to low and cook the fish on each side for approximately 3 minutes.

    The Dukkah spice coating will turn slightly darker in color. If you put the fish into very hot oil, you will burn the spices so make sure you keep an eye on the oil while its heating up.

    To ensure that the fish is cooked thoroughly, its best to cut one fillet in the centre to see if the flesh has turned completely white in color.
