    Take 5 Bamboo Skewers and immerse them in water for at least an hour.

    Cut the chicken into pieces large enough to make kebabs.

    Marinate the chicken pieces with lime juice, ginger garlic paste, pepper powder, nutmeg powder, green cardamom powder and salt.

    Mix well, cover the bowl with plastic wrap and leave it in the refrigerator for half an hour.

    Next, add the parmesan cheese and ricotta cheese to the chicken and smear all over.

    The marinade should now be thick in consistency. If time permits, allow the chicken to sit in this marinade for a couple of hours or even overnight.

    Turn on the oven and allow it to pre-heat to 350 ° F.

    Skewer the pieces of chicken, leaving a little space between each piece.

    Lay the skewers out in a tray lined with foil or parchment paper.

    Once the oven is hot, put the tray in and allow the chicken to cook for 10 minutes.

    In the meanwhile, melt the butter and keep a brush handy to baste the chicken kebabs.

    After 10 minutes, remove the tray and turn the skewers over so the chicken cooks evenly.

    Brush the pieces with butter and return the tray to the oven for another 12 minutes.

    The chicken should have a few brown spots once completely cooked.

    You will see some juice in the tray. You could discard any runny juice and only spoon out any thick marinade that's left in the tray and re-apply it to the chicken pieces before serving.
